Citrus & Garlic BBQ Kale

I know, I know, kale’s 15 minutes of fame has long since passed. There was a time when kale salads were on every menu and perhaps you might be ‘over the kale’ now. But maybe it’s time to spice it up a little!

Kale is considered a superfood, full of rich vitamins and minerals. It’s also a hearty veggie that can grow into the cold fall/winter season too. Making it a bountiful feature in summer CSAs like Grey Arrow Farm. Here is another way to keep kale on the plate that isn’t just another salad.

Another creative way I’ve used kale is by dehydrating it and turning it into a spice blend.

Citrus & Garlic BBQ Kale

  • 8-12 large kale leaves, any variety

  • 1-2 garlic cloves, minced

  • ½ cup blood orange olive oil (or substitute for regular)

  • Juice from one naval orange

  • 1 tsp garlic salt

  • ½ tsp cayenne pepper

Salt and pepper to taste

In a large resealable bag, combine all ingredients. Massage kale until evenly coated. Let marinate for up to 2 hours in the fridge, occasionally turning and massaging the kale.

Grill on a medium to low heat BBQ for 1-2 minutes on each side until charred.
