Grilled Corn & Tomato Salad

 

Summer on a plate! At the peak of tomato and corn season, this salad is on repeat in my house.

Grilled Corn & Tomato Salad

  • 3-4 ears of corn, grilled and shucked

  • 3-4 cups cherry tomatoes, halved

  • 1 shishito pepper, thinly sliced (or 1/2 green pepper)

  • 1/2 cup red onion, thinly diced

  • 1/2 cup fresh chopped basil

  • 1/2 cup fresh chopped parsley

  • 1 cup feta cheese

  • 3 tbsp olive oil

  • 3 tbsp chive blossom vinegar (or substitute red wine vinegar)

  • 1 tsp garlic salt

  • Salt and pepper to taste

Toss together corn, cherry tomatoes, peppers, red onions, basil and parsley. Season with oil, vinegar and garlic salt and toss until evenly coated. Layer with feta cheese and season with salt and pepper before serving.
