Garlic Miso Roasted Radishes

Have you ever roasted a big bowl of vibrant, juicy radishes before? Neither had I until a couple of years ago. Now it’s one of my favourite ways to spice them up in the kitchen. With a little lemon juice, garlic and umami of the miso paste, these roasted radishes will brighten up your next dinner table.

Garlic Miso Roasted Radishes

  • 1 lb radishes, cleaned and trimmed (cut large radishes into halves or quarters depending on size)

  • 2 garlic cloves, minced

  • 3 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tbsp miso paste

  • 1 tbsp fresh parsley, finely chopped (or 1 tsp dried)

  • Salt and pepper to taste

Preheat the oven to 425°F.

In a large bowl, whisk together olive oil, garlic, lemon juice, miso paste and salt and pepper.

Add the radish in the bowl and toss until they are evenly coated with the dressing.

Transfer onto a parchment lined baking sheet and bake for 20 minutes, turning them halfway through the roasting process, until golden brown. Season with salt and garnish with parsley.
