Charred Garlic Scape Dip

 

This recipe was inspired by my friend Kaelin’s charred spring green onion dip. It’s a perfect dip for those summer BBQs or summers on the deck with a cold drink. Garlic scapes almost feel like a season onto their own. It’s short, but I do find they last a good couple of weeks in the fridge.

There are many ways to use garlic scapes, including pestos, butter, pickles, or raw, but this garlic scape dip has to be one of my favourite.

Charred Garlic Scape Dip

  • 10-12 scapes

  • 6 oz of cream cheese

  • 1/2 cup sour cream

  • 1/4 cup mayonnaise

  • 1 tbsp lemon juice

  • 1/2 tsp garlic salt

  • 1/2 tsp onion powder

Char the scapes, either on the BBQ or in a cast iron on the stove. Remove the flower top so you’re left with only the stem. Cut the scapes into 1 inch segments.

In a small food processors or blender, place all the ingredients and pulse until smooth. Taste and adjust seasoning as needed. Serve with crackers, chips, or veggies.
