Beet Green Smoothie

Save those beet greens!! This recipe takes advantage of the entire beet—from root to leaf— for a delicious healthy breakfast or quick meal on the go.

The beets pair amazingly with the sweetness of strawberries and raspberries, and the nutty flavour of saskatoons.

Tip: For zero waste, wash your beet greens and store them in the freezer until needed.

Beet Green Smoothie

Serves two

  • 1 cup cooked or raw beets, chopped

  • 1 cup beet greens, cleaned

  • 1 – 1 ½ cup Greek yogurt

  • 1 – 1 ½ cup mixed frozen berries (strawberries, saskatoons, raspberries)

  • 1 tbsp honey

Combine all ingredients into a blender and mix until smooth. If necessary, add a few splashes of water to get the smoothie to blend.
