Smoked Chive Blossom Potato Salad

There’s usually only one version of potato salad allowed at our family gatherings. However, I like to go a little rogue every now and then with a smoked version. Here’s my take on perfect summer side dish. Secret ingredient is chive blossom vinegar Shhh…. you don’t have to tell anyone.

Smoked Chive Blossom Potato Salad

  • 3 pounds red potatoes

  • 1-2 bell peppers, sliced thinly length wise

  • 1 small red onion, thinly sliced

  • ¾ cup mayonnaise

  • ¼ cup chive blossom vinegar

  • 1 tbsp yellow mustard

  • 2 tsp smoked paprika

  • 2 tsp garlic salt

  • Chives and chive blossoms for garnish

In a large pot, boil potatoes just until fork tender and a little al dente. For this recipe I like to leave the skin on the potatoes as well. Once cooked, drain the potatoes and rinse with cold water. Let the potatoes cool and place in the fridge until ready to make and serve the salad.

 To make the dressing, in a large bowl add mayonnaise, vinegar, mustard, smoked paprika and garlic salad. Add in potatoes, bell peppers, and red onions. Mix with a spatula until evenly combined.  Garnish with chives and chive blossoms.
