Chive Blossom Vinegar

  • 1 cup white vinegar

  • 1 cup chive blossoms

Rinse and clean the chive blossom. Layer the chive blossoms in a small mason jar to about 1/2 to 3/4 full.

In a small saucepan, bring white vinegar to just under a rapid boil. Pour the vinegar over the blossoms and let cool. After a couple of minutes, the vinegar will turn to a wonderful pink rose colour.

Seal the jar and let the blossom steep in the vinegar for 2-4 weeks depending on how strong you want the vinegar to taste. Remove the blossoms.
